2001 Seavey Napa Valley Cabernet Sauvignon 750ml
The 2001, Seavey Vineyard’s 12th estate produced Cabernet, is a blend of 95% Cabernet and 5% Petit Verdot grapes that came from vines planted on several different locations of the South-facing hillside vineyard and harvested during the first three weeks of October. Winemaking style followed classic Bordeaux methods. Harvested at 25 degrees brix, the juice remained in contact with the skins for almost 28 days. Following malolactic fermentation, the wine was aged in French oak barrels (48% new oak). The 2001 Cabernet was bottled on June 19th & 20th, 2003.

Full-bodied and powerful with velvety tannin, fabulous intensity, and stunning aromas of smoked herbs, charcoal embers, chocolate, creme de cassis, and minerals, it is a rich, voluptuously textured wine that admirably hides its serious tannin levels. It will unquestionably keep for two decades or more. Drink: 2006 - 2026.
