Martin Stelling Cabernet is a showy wine both in the aromas and on the palate. The 2005 vintage has aromas of jammy black fruits, chocolate, sweet vanilla and cedar. Similar flavors on the palate include a medley of blackberry and cassis. The 2005 started off with extremely concentrated fruit and actually tasted very young after a year of aging. Therefore, there is a little more oak on this vintage, which offers the sweet spice, toast and vanilla notes that accompany the fruit. Layer upon layer, this wine has an elegant structure with smooth, coating tannins that really expand and sweeten into a long, lush finish.

WINE ENTHUSIAST REVIEW: A big, powerful wine that needs aging. Lush, ripe fruit, bigtime oak, firm tannins and vital acidity each rule their respective kingdoms. But they’ll come together in time. Massive in black currant, cherry and chocolate flavors, with strong new oaky vanilla and toast influences, the wine needs years to soften. Give it until at least 2010, and it should develop through 2015 in a proper cellar.
The 100-acre Martin Stelling Vineyard is located at the base of the western hills in Oakville, and is the primary vineyard for Far Niente Cabernet Sauvignon. Nickel & Nickel is fortunate to farm two acres of this vineyard. The soils are composed of deep
volcanic loam with underlying clay and gravel.
The 2005 growing season started out as a normal year for this vineyard with budbreak in late March and bloom in late May. Conditions were ideal during bloom and the vineyard had a good set, which resulted in a bit more fruit than last year. The summer months were very moderate and the season looked like it was going to be a good one. We dropped fruit at veraison to bring the crop level into our desired range and then waited for some warm weather. A small heat wave at the end of September helped with ripening, however, the fruit was still not ready to harvest. As the weather got cold in late October, the leaves started to change color and this process quickly softened the tannins and concentrated flavors, allowing us to harvest the fruit in the early morning.
