Winery Notes- Première Cuvée Extra-Brut, signature of the Bruno Paillard House, is a very personal interpretation of the whole region. It is the fruit of more than 30 crus from the noblest terroirs of the Champagne region, whose composition is kept secret. Selection of the first press of Pinot Meunier (22%), Chardonnay (33%) and Pinot Noir (45%), of which a part (20%) makes its first fermentation in barrel. In addition, there are the reserve wines, 25 vintages blended since 1985 in a proportion that can go up to 50%. A long aging in the cellar takes place, 3 years on lees followed by 5 months minimum after disgorgement. The dosage, Extra-Brut (less than 6g/L), makes this wine an authentic and pure champagne.
VINOUS REVIEW: The NV Extra Brut Premiere Cuvée is bright, precise and beautifully focused. In other words, a classic Bruno Paillard Champagne. Lemon confit, white flowers, tangerine peel, chamomile and dried flowers all grace this taut, super-expressive NV Champagne. Medium in body and airy, with terrific depth the Premiere Cuvée is classy and inviting. Time in the glass brings out the breadth and textural richness of the red grapes in the blend. It will drink beautifully as an aperitif or with lighter foods at the dinner table.
DECANTER MAGAZINE REVIEW: Representing 50% of production, the Première Cuvée is Bruno Paillard's bread and butter. It's made from first-press juice, 20% of which is barrel-fermented. Up to half of the blend is made up of reserve wines dating back to 1985, yet this Champagne is amazingly fresh. It has a steely lemon nose with floral hints, and the palate has a slightly woody structure with vanilla notes, filled out with apple and bright citrus flavours. Limey acidity and a saline aspect appear on the mid-palate, leading to a long, mouthwatering finish.
JAMES SUCKLING REVIEW: This has a super fresh, attractive nose with brioche, lemons, toasty autolysis and peaches. The palate is soft, smooth and bright, the acidity delivering a fresh edge to the sweet lemons, peaches and pineapple.
ROBERT PARKER REVIEW: This bottle of Paillard's NV Extra Brut Première Cuvée was disgorged in May 2018, and it's showing well, unfurling in the glass with aromas of lemon oil, ripe apple, brioche and dried white flowers. On the palate, the wine is medium to full-bodied, with an elegant but broad-shouldered profile, displaying good concentration at the core, a fine mousse and brisk balancing acids, concluding with an elegantly chalky finish. Based on the 2014 vintage, this is a classy, incisive wine that will reward bottle age.
