Distillery Notes- Noel Sweeney is regarded by many to be one of the most important and influential distillers in Irish Whiskey. Recognized as distiller of the year 2008, 2009, 2010, 2011, and again in 2021, and inducted to the Whisky Hall of Fame in 2017. Noel was involved in the selection of each barrel we are releasing. His overarching observations on the barrels are as follows: The whiskey has been matured in second fill barrels and as such the character of the distillery distillate is more prominent than that of the barrel/oak. The colour is also a pale straw colour as a result of this. It has a familiar taste with varying degrees of spice, citrus fruits, some orchard fruits like red apple, honey, lemons, pears, pineapple, sweet malty biscuity character, aniseed which give a confectionary sweetness, boiled sweets and a lingering dry finish.
