2022 Aperture Soil Specific Alexander Valley Sauvignon Blanc
Winery Notes- The 2022 Sauvignon Blanc incorporates our estate-grown sémillion and sauvignon musqué, that we planted on the Aperture property in 2019. These two estate blocks were hand-harvested in early Stepember at the same time as the Sauvignon Blanc from Farrow Ranch in Geyserville. The Sauvignon Blanc from Dry Stack Vineyard in the Bennett Valley AVA was brought to the winery in early October, consistent with this vineyard’s unique late-ripening characteristics. Basing the pressure on the acid measurements, we lightly whole cluster press the fruit to a stainless steel tank where we let the juice chill at 50°F. After three days, we clean-rack it to a smaller tank leaving the heavy sediment behind. Three days later, fermentation starts naturally and keeps below 56°F until 18 brix when we transfer the young wine to barrels. There, it spends the remaining time on lees until just before bottling. Once transferred to barrel, the wine is placed in our cold barrel room to keep fermentation cool and slow to intentionally preserve the bright aromatics and fresh quality. As the wine slowly ferments for an additional 3 weeks in barrel, we top and stir weekly. The wine stays in those same barrels for 6 months.$37.9024 -

2023 Domaine Daulny Sancerre (375ml Half Bottle)
Etienne Daulny owns 15 hectares of vines that are divided into about 50 different plots within the Sancerre wine region. Daulny combines diverse plots from varying types of soil, including clay and flint, Portlandian and Kimmeridgian, into his regular cuvée of Sancerre. But Daulny's cuvée normale is far from normal. After all, grapes from some of the appellation’s most revered vineyards make their way into this cuvée, including old vine plantings at Les Monts Damnés, Les Bois Butteux, and La Perriere. Clos de Chaudenay (the hot spot) is a single vineyard cuvée from a gentle slope just above Verdigny. These southwest facing vines average 40 years of age. Etienne Daulny makes the style of Sancerre I can’t get enough of; clean, juicy and racy. Melon, grapefruit and gooseberry with aromas of green pea and spearmint. The vibrant nature of this wine makes it one of the most versatile on the planet. Great with all types or Seafood, soft cheeses and chicken dishes!! -Eric Entrikin-Master Sommelier$14.9011 -

2023 Dragonette Happy Canyon of Santa Barbara Sauvignon Blanc
Winery Notes- The great Happy Canyon blend has returned. The 2022 sold out long ago and we have been anxiously awaiting this wine in the Tasting Room and around town at top restaurants. A product of all four Sauvignon Blanc vineyards, this wine shows the true excellence of the Happy Canyon appellation; beautiful ripeness and dramatic fruit flavors held aloft by fabulous acidity and minerality and only a hint of the herbaceousness for which Sauvignon Blanc is (in)famous. As always, top notch, per acre farming is the key here, as we prune and shoot thin for drastically lower yields than in the case of the conventional SB farming protocols. Concentration is dramatically more intense with this style of farming. For the Happy Canyon, we then choose lots that have a more energetic, taut, and lively character, along with the depth and concentration that these fabulous vineyards provide. The wine ages for a total of 7 months on the lees, before it is blended, cold stabilized with a light fining (plant and soil-based fining agents) and gently cross-flow filtered before bottling. The wine pairs with a tremendous variety of foods with weight and interest lifted by great structure and acidity. The 2023 version of the Happy Canyon Sauvignon Blanc is 40% Grassini, 37% Vogelzang, 18% Grimm’s Bluff and 5% Two Wolves. The wine was aged in 72% neutral oak barrels and 28% stainless steel, with 85% Clone 1 and 15% musque. The wine is delicious out of the gate showing mixed tropical fruits, crisp citrus-laced acidity, minerals and a touch of fresh herbs.$33.9024+ -
