2022 Aperture Soil Specific Sonoma County Bordeaux Blend
Winery Notes- All of our fruit is hand harvested and brought into the winery within hours of being picked. Everything is methodically and obsessively sorted. A cold soak of 4-7 days with minimal air incorporation starts the extraction and then cool fermentations with native yeast carry out the remaining. Air and temperature are controlled throughout the 14-28 day fermentation and extended maceration is determined lot by lot when I walk the fine line of full extraction but still keep an elegant and silky texture. Wines go through malolactic fermentation in barrel and are aged (sur-lees) for 18 months. For this vintage, we crafted a distinct Bordeaux blend, composed of primarily Merlot and Malbec, with a delicately balancing of smallerinclusion of cabernet sauvignon, petit verdot, and cabernet franc. The ripe red fruit characters are structured by silky seamless tannins, showcasing an elegant density to the blend.$49.903 -
2022 Domaine Dujac Gevrey-Chambertin 1er Cru Aux Combottes
Winery Notes- Les Combottes, a locality south of the village of Gevrey-Chambertin, lies halfway up the hill, just below the steep incline of Les Monts Luisants, in a steeply sloping area (5–6%). Ranging in altitude from 271 to 282 meters, this lieu-dit faces due east. The soil changes from east to west. In the eastern part of the plot, the reddish-brown soil is 40 to 50 cm thick, containing angular-to-rounded limestone fragments. In the western part of the lieu-dit, the soil is rich in fine angular limestone gravel. The underlying substratum Les Combottes is ocher-colored crinoidal limestone (limestone in Entroques), rich in debris from marine organisms. To the west, this layer is overlain by bedded limestone scree (grèzes litées), covering the upper part of the slope. This Comblanchien limestone scree is composed of fine angular gravel.$379.901
