2021 Hamel Stratum Sonoma Valley Red Blend (Was $60)
Winery Notes- The 2021 Stratum Red Wine displays a dark ruby hue in the glass. Its lively and dynamic nose opens with black cherry, blackberry, and raspberry and a hint of flintiness, evolving into a bouquet of fresh sage, wild herbs, and delicate rose petals. These aromas are grounded by a pronounced sanguine quality, reminiscent of crushed, iron-rich volcanic rock. On the palate, layers of ripe plum and pomegranate deliver a vibrant and harmonious character. With a focused tension on the front and mid-palate, the energy and sapidity of the wine’s structure extend into a finish shaped by tightly knit, chalky mineral tannins. 2022 Aperture Soil Specific Sonoma County Bordeaux Blend
Winery Notes- All of our fruit is hand harvested and brought into the winery within hours of being picked. Everything is methodically and obsessively sorted. A cold soak of 4-7 days with minimal air incorporation starts the extraction and then cool fermentations with native yeast carry out the remaining. Air and temperature are controlled throughout the 14-28 day fermentation and extended maceration is determined lot by lot when I walk the fine line of full extraction but still keep an elegant and silky texture. Wines go through malolactic fermentation in barrel and are aged (sur-lees) for 18 months. For this vintage, we crafted a distinct Bordeaux blend, composed of primarily Merlot and Malbec, with a delicately balancing of smallerinclusion of cabernet sauvignon, petit verdot, and cabernet franc. The ripe red fruit characters are structured by silky seamless tannins, showcasing an elegant density to the blend.$49.903 -

2018 Immortal Slope Sonoma County Cabernet Sauvignon
Winery Notes- Our 2018 Slope is rich with dark brambly fruit framed by sweet spices, coffee, and chocolate, all carried on a supple yet dense palate. As the wine opens, it reveals layers of flavor: blackberry, blueberry, lavender, and spice cake, completed by black plum, sweet tobacco, black tea, Muscovado sugar, and espresso. While the mountainside tannins provide a dense framework to carry the wine, they are well-ripened, supple, and relax into velvet with decanting.
